This Easy Walking Taco Casserole combines seasoned beef, crunchy tortilla chips, and melted cheese for a fun, family-friendly Tex-Mex dinner.

  • 1 packet Taco seasoning Homemade blend works too.
  • 1 can Black beans or pinto beans Rinse and drain before use.
  • 1 cup Corn Canned or frozen.
  • 1 cup Salsa or diced tomatoes with green chiles Salsa is preferred for flavor.
  • 2 cups Shredded cheese Use cheddar, Mexican blend, or pepper jack.
  • 3 cups Crushed chips Fritos or tortilla chips.

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 baking dish.
  • In a large skillet, cook the ground beef over medium heat until browned, draining excess grease.
  • Stir in the taco seasoning and the amount of water as per the packet instructions, let it simmer for a couple of minutes.
  • Add beans, corn, and salsa (or diced tomatoes) to the skillet, stirring for another 2 to 3 minutes to heat.
  • In the baking dish, layer crushed chips, the meat mixture, and a generous amount of cheese. Repeat layers if the dish is deep.

Baking

  • Bake for about 12 to 15 minutes until cheese is melted and bubbly.
  • Let it sit for 5 minutes before serving.

Serve warm scoops in bowls with options for toppings. You can use diced bell peppers or onions for extra veggies. Keep some chips for topping before serving to maintain crunch.
