  • 1.5 pounds boneless skinless chicken breast or thighs, cut into bite-size pieces
  • 3-4 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 3-4 cloves garlic, minced
  • 0.5 cups chicken broth
  • 0.5 cups heavy cream
  • 1/3 cups Parmesan, grated
  • Salt, black pepper, paprika, and cayenne (to taste)

Preparation

  • Pat the chicken dry with paper towels and season with salt, pepper, and paprika.
  • Heat a large skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. Once melted, add the chicken in a single layer.
  • Cook the chicken for 3-4 minutes per side until golden and mostly cooked through. Remove to a plate.
  • Lower the heat to medium. Add another tablespoon of butter and stir in the garlic for about 30 seconds.
  • Pour in the chicken broth and scrape the bottom of the skillet. Let bubble for 2 minutes.
  • Stir in heavy cream and Parmesan while continuing to stir until smooth and slightly thickened. Add remaining butter to melt.
  • Return the chicken along with any juices to the skillet. Simmer for 3-5 minutes until cooked through.
  • Taste and adjust seasoning as needed. Sprinkle herbs on top and serve immediately.

Note

Make sure to cut chicken first to keep the cooking time at 30 minutes. If sauce is too thick, add broth; if too thin, simmer longer.
