  • 1 lb Ground beef or ground turkey Use your preferred meat.
  • 1 small onion, chopped
  • 2-3 cloves garlic, minced
  • 1 packet taco seasoning Or your favorite homemade blend.
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14-15 oz) crushed tomatoes or tomato sauce
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained (or frozen corn)
  • 2-3 cups chicken broth or beef broth
  • to taste Salt and pepper
  • optional a squeeze of lime, chopped cilantro Add for flavor.

Cooking

  • Set a big pot on the stove over medium heat. Add the ground meat and chopped onion. Cook until the meat is no longer pink, breaking it up as you go.
  • Stir in the garlic and cook for about 30 seconds until fragrant.
  • Sprinkle in the taco seasoning and stir around to coat the meat. If the pot looks dry, splash in a little broth.
  • Pour in the diced tomatoes, crushed tomatoes or sauce, beans, corn, and broth. Stir well.
  • Bring to a gentle simmer and let cook for 10 to 15 minutes. Taste and adjust salt and pepper as needed.
  • Ladle into bowls and add your favorite toppings.

Note

For a thicker soup, let it simmer longer. For a spicier kick, add jalapeno or chipotle. This soup is excellent for leftovers and reheats well for lunch.
