  • 1 pound thinly sliced beef steak or shaved ribeye Use a quality cut for best flavor.

  • 1 large red bell pepper, thinly sliced

  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon dried Italian seasoning
  • 4 ounces cream cheese, softened
  • 1 cup milk
  • 1 tablespoon cornstarch
  • 1 cup shredded provolone or mozzarella
  • 1 cup shredded cheddar or Monterey Jack
  • 2 cups cooked noodles or cooked rice Optional for a heartier dish.

Preparation

  • Heat the oven to 375°F and lightly grease a 9x13 baking dish.
  • Warm the olive oil in a large skillet over medium-high heat. Add the onion and peppers, cooking until softened and fragrant, about 6 to 8 minutes.
  • Stir in the mushrooms and cook for an additional 3 minutes. Add garlic for the last 30 seconds of cooking to avoid burning it.
  • Push the vegetables to the edges of the skillet, add the beef in a single layer, and sprinkle with salt, pepper, paprika, and Italian seasoning. Sear for 1-2 minutes per side until pink fades.
  • In a bowl, whisk together milk and cornstarch until smooth, then stir in cream cheese until creamy.
  • Pour the milk mixture over the steak and vegetables in the skillet; it will thicken while baking.
  • If desired, fold in cooked noodles or rice, then taste and adjust seasoning.
  • Transfer the mixture into the prepared baking dish, top with provolone and cheddar cheese.
  • Bake for 15-18 minutes until the cheese is bubbling and golden at the edges. Let rest for 5 minutes before slicing.
  • Garnish with fresh parsley before serving.
