This Heavenly Banana Walnut Cream Cake combines ripe bananas, crunchy walnuts, and a light cream topping for an easy yet indulgent dessert.

  • 2-3 pieces very ripe bananas, mashed (about 1 cup) Use bananas with lots of brown spots for best flavor.
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon (optional) Optional but adds great flavor.
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar Reduce to 1/2 cup for less sweetness.
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt Can substitute with buttermilk.
  • 3/4 cup chopped walnuts Toast for extra flavor.

Cream Topping

  • 1 cup heavy whipping cream, cold
  • 4 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: extra walnuts or banana slices for the top

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round pan or an 8-inch square pan, and if using, line the bottom with parchment paper.
  • In a bowl, mix together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  • In a larger bowl, cream the butter and sugar until lighter and fluffy using a hand mixer or whisk.
  • Add eggs one at a time, then stir in vanilla, mashed bananas, and sour cream. The mixture may look messy, that's normal.
  • Add dry ingredients to wet ingredients, stir gently until no dry flour remains, then fold in chopped walnuts.
  • Pour the batter into the prepared pan and smooth the top. Bake for 30 to 40 minutes, until a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Make the Cream Topping

  • In a bowl, beat cream cheese until smooth, then add powdered sugar and vanilla, and beat again.
  • In a separate bowl, whip the cold heavy cream until soft peaks form, then fold this into the cream cheese mixture until fluffy.
  • Spread the cream topping over the cooled cake, and sprinkle extra walnuts on top if desired.

Note

Store the cake in the refrigerator due to the cream topping. It stays good for about 3 days and tastes even better on day two.
