Preparation

  • Grab your biggest pot and sauté onion, carrots, and celery with a dash of oil until they're cozy and soft.
  • Toss in minced garlic and stir for a minute.
  • Lay the chicken in the pot and pour in enough broth to cover everything.
  • Bring the heat up until it simmers, then lower the heat, cover, and let it cook for at least 20 minutes. Add potatoes halfway if using.

Finishing

  • Once the chicken is cooked, use a fork to remove it from the pot and shred it.
  • Return the shredded chicken to the pot and stir in the greens just before serving.
  • Adjust salt and pepper to taste and serve hot.
