Easy Garlic Butter Chicken Bites with Creamy Parmesan Pasta is a rich, comforting dinner made with tender chicken, garlic butter, and a silky Parmesan cream sauce.

  • 10-12 ounces pasta (fettuccine, linguine, penne, or rotini) Choose your preferred type.
  • 3 tablespoons butter, divided Plus a little extra if you love it rich.
  • 1 tablespoon olive oil Used for cooking the chicken.
  • 4-5 cloves garlic, minced Fresh garlic is recommended.
  • 1 cup heavy cream Half and half can be used in a pinch.
  • 1 cup freshly grated Parmesan Grate it yourself for the best melt.
  • 1 teaspoon Italian seasoning Adjust to taste.

Cooking Pasta and Chicken

  • Boil pasta in salted water until just tender. Reserve 1 cup of pasta water, then drain.
  • Pat chicken dry. Season with salt, pepper, and Italian seasoning.
  • Heat a large skillet over medium high heat. Add olive oil and 1 tablespoon butter.
  • Cook chicken in a single layer until browned and cooked through, about 6 to 8 minutes total. Remove to a plate.

Making the Sauce

  • Reduce heat to medium. Add remaining butter and stir in garlic for about 20 to 30 seconds until fragrant.
  • Pour in cream and let it warm for a minute. Add Parmesan and stir until smooth.
  • Add pasta and toss. Loosen with a splash of reserved pasta water if needed.
  • Add chicken back in and toss again. Taste and adjust salt and pepper.
  • Top with extra Parmesan and herbs if you want.

Note

Do not overcook the chicken. Grate your Parmesan for better melting. Use reserved pasta water to loosen the sauce if necessary. Leftovers can be reheated with a splash of milk or water.
