Preparation

  • Cube the watermelon and chill it if it is not already cold.
  • Slice cucumber and red onion thin. Soak onion in cold water for 10 minutes if strong.
  • In a large bowl, combine watermelon, cucumber, and onion.
  • Squeeze lime over the top and drizzle with olive oil.
  • Add chopped or torn mint and toss gently.
  • Crumble feta on top and gently toss again, finish with black pepper.
  • Taste before adding any salt.

Note

You can prep most ingredients ahead of time. Cube the watermelon and cucumber, slice the onion, and store them separately. Mix with dressing ingredients just before serving to keep it fresh.
