  • 2 tablespoons butter or olive oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1.5 pounds ground beef (or half beef, half pork)
  • 2 eggs
  • 0.75 cup breadcrumbs (plain or Italian style)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme (or Italian seasoning)
  • 0.33 cup beef broth (plus a splash more if needed)
  • 0.5 to 1 cup shredded cheese like gruyere, Swiss, or mozzarella

Preparation

  • Preheat your oven to 375 F. Lightly grease a loaf pan, or line a sheet pan with parchment for a rustic shape.
  • In a skillet over medium heat, melt the butter. Add the onions and a pinch of salt, stirring often for about 15 to 20 minutes until soft and golden. If they start sticking, add a splash of broth or water. Add the garlic for the last 30 seconds.
  • In a large bowl, combine the ground meat, eggs, breadcrumbs, Worcestershire sauce, salt, pepper, thyme, and beef broth. Add the cooked onions and garlic, including any buttery bits from the pan. Mix gently with your hands until combined.
  • Shape the meat mixture into a loaf in the loaf pan or on the sheet pan.

Baking

  • Bake for about 45 to 55 minutes, or until the internal temperature reaches 160 F.
  • Sprinkle the shredded cheese on top in the last 10 minutes of baking until melted and bubbly.
  • Let the meatloaf rest for 10 minutes before slicing.

Note

For added flavor, sprinkle thyme on top before baking. Excellent leftovers for sandwiches or quick lunches. Cool and store in an airtight container; refrigerate for 3-4 days or freeze individual slices for 2-3 months.
