  • 1 tablespoon vinegar or lemon juice Adds tanginess.
  • 1 teaspoon sugar or honey Balances the tang.
  • 1 to 2 tablespoons fresh dill, chopped Or use dried dill (1 to 2 tsp).

Preparation

  • Slice the cucumbers. If the skins are thick or waxy, peel some stripes off, but it's usually fine to keep most of the peel.
  • Optional: Toss cucumbers with a pinch of salt and let them sit for 10 minutes, then gently squeeze or drain off extra liquid.
  • In a bowl, stir together yogurt or sour cream, mayo if using, vinegar or lemon, sugar, dill, salt, and pepper.
  • Add cucumbers and onion, then toss until everything is coated.
  • Chill for 15 to 30 minutes if you have time. Then taste and adjust salt and tang.
