Ingredients

Main Ingredients

  • 3 large ripe bananas, mashed well Should be very ripe with brown spots.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar For balanced sweetness.
  • 1/2 cup neutral oil (canola or light olive oil) Keeps the bread moist.
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon cinnamon (optional but recommended)
  • 1/2 cup Greek yogurt or sour cream For added moisture.
  • 1 to 1 1/4 cups chocolate chips Semisweet recommended.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9 by 5 inch loaf pan with parchment paper, lightly greasing the sides.
  • In a large bowl, mash the bananas until mostly smooth. Whisk in the granulated sugar, brown sugar, oil, eggs, and vanilla extract. Stir in the yogurt until well combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Sprinkle a spoonful of the flour mixture over the chocolate chips and toss to coat them. This helps keep the chips from sinking.
  • Fold the dry ingredients into the wet mixture with a spatula, stopping when the last streak of flour disappears to avoid overmixing.
  • Fold in the chocolate chips, reserving a small handful for the top of the batter.

Baking

  • Spread the batter into the prepared pan and sprinkle the remaining chocolate chips on top for an attractive bakery look.
  • Bake in the preheated oven for 55 to 65 minutes, or until a toothpick comes out with a few moist crumbs. If the top browns too quickly, tent it with foil in the last 15 minutes.
  • Cool in the pan for 10 to 15 minutes before lifting out to a wire rack to cool completely. Slice when just warm for melty pockets of chocolate.

Note

For added texture, you can stir in chopped toasted walnuts or pecans, keeping the total add-ins around 1 cup to maintain loaf consistency.
