  • 2 cups cheddar cheese Shredded, reserve some for topping.
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 1 tsp paprika For flavor.
  • 1 tsp Italian seasoning For flavor.

  • 1 cup frozen peas Add before baking.
  • 1 cup chopped spinach Add before baking.
  • 1 cup corn Add before baking.
  • 1 cup diced bell pepper Add before baking.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until the beef is no longer pink.
  • Drain excess grease from the skillet.
  • Stir in the diced tomatoes, beef broth, rice, paprika, and Italian seasoning. Mix well.

Baking

  • Transfer the mixture to a 9x13 baking dish. Cover tightly with foil.
  • Bake in the preheated oven for about 30 minutes, or until the rice is tender.
  • Uncover, sprinkle the reserved cheese on top, and bake for an additional 5-10 minutes, until the cheese is bubbly and golden.
  • Let it rest for 10 minutes before serving.
