Ingredients
  

For the boil

  • 3 lbs small potatoes About 10 to 12 minutes cooking time
  • 4 ears corn on the cob 5 to 7 minutes after the potatoes have started cooking
  • 1 lb sausage Slice and add near the start; 5 minutes cooking time
  • 2 lbs shrimp 2 to 3 minutes cooking time, add last to avoid overcooking
  • 1 lb crab legs 4 to 6 minutes cooking time, just to warm through
  • 1 lb mussels 3 to 5 minutes; discard any that remain closed
  • 1 lb clams 3 to 5 minutes; discard any that remain closed
  • 2 tail lobster tails 5 to 7 minutes cooking time, split shells for even cooking

For the garlic butter sauce

  • 1 cup butter Melt with garlic before serving
  • 6 cloves garlic Minced for the sauce
  • 1 tbsp lemon juice Splash for the sauce
  • 1 tbsp Cajun seasoning For the sauce, adjust to taste

Seasoning and broth

  • 4 quarts water For the pot base
  • Cajun seasoning Generously added to water
  • 2 lemons Halved and added to broth
  • 3 bay leaves For flavoring
  • to taste salt Important for flavoring the broth

Preparation

  • In a large stockpot, bring water to a boil and season generously with Cajun seasoning, salt, garlic, and lemon.
  • Once boiling, add sliced sausage and cook for about 5 minutes.
  • Add potatoes and cook for 10 to 12 minutes, or until just fork tender.
  • Next, add corn and cook for an additional 5 to 7 minutes.

Cooking Seafood

  • Add crab legs and cook for 4 to 6 minutes.
  • Then add mussels and clams, cooking for 3 to 5 minutes until they open.
  • Finally, add shrimp and cook for 2 to 3 minutes until pink and just firm.
  • If using lobster tails, add during this stage and cook 5 to 7 minutes.

Garlic Butter Finish

  • In a separate pan, melt butter over medium heat.
  • Add minced garlic and sauté until fragrant (but not browned).
  • Add lemon juice and Cajun seasoning to the melted butter.
  • Drizzle over seafood before serving or toss everything together in a large bowl.
